摘 要:目前对于蜂蜜品质的检测主要是基于化学法,然而化学法分析存在周期长,还需要用到大量有机试剂等缺点。因此,本研究旨在建立一种快速测定蜂蜜品质的方法,首先以掺入0~90%果葡糖浆的546份蜂蜜样品为材料,基于傅里叶变换中红外光谱技术(FTIR)结合偏最小二乘法(PLS)建立蜂蜜中葡萄糖和果糖含量的中红外光谱模型,用以快速分析蜂蜜品质。结果显示,在标准正态变量(SNV)预处理方法下,在800~1200 cm^(-1)波数下构建的蜂蜜葡萄糖和果糖指标模型效果最好,其中葡萄糖指标模型相关系数(r)、建模集方差(RMSEC)、预测集方差(RMSEP)、平均相对误差分别为0.9916、0.91、0.94和0.89%;果糖指标模型r、RMSEC、RMSEP、平均相对误差分别为0.9935、1.03、0.99和1.51%。说明该方法可行,对于有效替代传统的化学方法,明显降低常规分析方法昂贵的费用,改善操作者健康,减少环境污染意义重大。At present,the detection of honey quality is mainly based on chemical methods.However,chemical analysis has drawbacks such as long cycles and the need for a large number of organic reagents.Therefore,this study aims to establish a rapid method for determining the quality of honey.Firstly,546 honey samples mixed with 0%-90% fructose syrup were used as materials,and a mid-infrared spectroscopy model for glucose and fructose content in honey was established based on Fourier transform mid-infrared spectroscopy(FTIR)combined with partial least squares(PLS)to quickly analyze honey quality.The results showed that under the standard normal variable(SNV)preprocessing method,the glucose and fructose index models in honey constructed at a wave number of 800-1200 cm^(-1) had the best performance.The correlation coefficient(r),the root mean square error of calibration(RMSEC),the root mean square error of prediction(RMSEP),and the average relative error of the glucose index model were 0.9916、0.91、0.94 and 0.89%,respectively;The r,RMSEC,RMSEP,and average relative errors of the fructose index model were 0.9935、1.03、0.99 and 1.51%,respectively.The feasibility of the established method is demonstrated,which is significant for effectively replacing traditional chemical methods,significantly reducing the expensive analysis costs of conventional analysis,improving operator health,and reducing environmental pollution.
