摘  要:为提高姜渣姜辣素的提取效率,以昌邑大姜加工后得到的副产物——姜渣为原料,乙醇体积分数、料液比和超声时间等为考察因素,姜辣素得率为响应值,在单因素试验的基础上,结合响应面法优化姜渣提取工艺,并研究姜渣姜辣素的体外抗氧化活性。结果表明,姜渣姜辣素最佳提取工艺配方为乙醇体积分数69%、料液比1∶21(g/mL)、超声时间15 min,此工艺下姜辣素最终得率为1.45%;姜辣素对DPPH自由基的清除能力较强,且呈浓度依赖性。此研究为姜渣姜辣素的优化提取和综合利用提供依据。To improve the extraction efficiency of gingerol from ginger slag,this study optimized the ultrasonic-assisted extraction process using response surface methodology(RSM).Ginger slag,a by-product from Changyi ginger processing,was selected as the raw material.Single-factor experiments and RSM were employed to analyze the effects of ethanol concentration,material-to-liquid ratio,and ultrasonic time on the gingerol yield.The in vitro antioxidant activity of the extracted gingerol was further investigated.Results demonstrated that the optimal extraction recipe was as follows:ethanol volume fraction of 69%,material-to-liquid ratio of 1∶21(g/mL),and ultrasonic duration of 15 min.Under these conditions,the gingerol yield reached 1.45%.Additionally,the extracted gingerol exhibited significant concentration-dependent scavenging capacity against DPPH free radicals.This study provides a theoretical foundation for the optimized extraction and comprehensive utilization of gingerol from ginger slag.
