黔产福鼎大白茶茶多酚的提取及其稳定性分析

摘  要:采用酒石酸亚铁分光光度比色法和水提法,以茶多酚在540 nm波长处吸光度值为指标,研究了福鼎大白茶中天然茶多酚提取的最佳工艺条件。研究揭示了最优提取参数:原料与溶剂比例优化至1∶50(g/mL),操作温度设定为87.5℃,单次提取时间控制为45 min,提取次数为1次。此外,福鼎白茶茶多酚稳定性研究表明:该成分在略微酸性和中性环境下展现出良好的稳定性,但在碱性条件下则难以维持其稳定状态;同时,茶多酚对光照和高温较为敏感,易发生分解反应;值得注意的是,茶多酚具备一定的抗氧化潜力,尽管其抗还原能力相对较弱。In this paper,ferrous tartrate spectrophotometric colorimetric method and water extraction method were used to study the optimum extraction conditions of natural tea polyphenols from Fuding white tea,with the absorbance value of tea polyphenols at 540nm wavelength as the index.The study revealed the optimal extraction parameters:the ratio of raw material to solvent was optimized to 1:50(g/mL),the operating temperature was set to 87.5℃,the single extraction time was controlled to 45 min,and the extraction times were once.In addition,the study on the stability of polyphenols of Fuding White tea showed that this component showed good stability under slightly acidic and neutral environment,but it was difficult to maintain its stable state under alkaline conditions.At the same time,tea polyphenols are sensitive to light and high temperature,and are easy to decompose.It is worth noting that tea polyphenols have a certain antioxidant potential,although their anti-reduction ability is relatively weak.
