摘  要:我国是禽蛋生产和消费大国,禽蛋保鲜技术的研究对禽蛋行业发展意义重大。要想保持蛋质新鲜,首先就要保证禽蛋蛋壳的清洁,闭塞蛋壳上的气孔,同时控制储藏环境的温度、湿度和气体组成,降低蛋内酶的活性。涂膜保鲜主要是使蛋壳的气孔处于密封状态,阻止微生物侵入,减少蛋内水分的蒸发,防止CO2的逸出,抑制酶的活性,延缓蛋内生化反应速度,进而达到较长时间保持鲜蛋品质和营养价值的目的。涂膜材料主要有以下类别:高分子材料、油质性材料、复合材料、蛋白类材料等。单一的涂膜材料通常存在某一方面性能的不足,而复合涂膜材料的阻湿性、稳定性、抗氧化性等均有所提升。最后本文对禽蛋保鲜的研究趋势提出了展望,旨在为丰富和完善禽蛋保鲜的方法及其理论体系研究提供参考。China is a major producer and consumer of poultry eggs.The research on poultry egg preservation technology is of great significance to the development of the poultry egg industry.To keep eggs fresh,the first step is to ensure the cleanliness of the eggshells and block the pores on the eggshells.At the same time,it is necessary to control the temperature,humidity,and gas composition of the storage environment to reduce the activity of enzymes in the eggs.Coating preservation mainly aims to keep the pores of the eggshells in a sealed state,preventing the invasion of microorganisms,reducing the evaporation of moisture in the eggs,preventing the escape of CO2,inhibiting the activity of enzymes,and slowing down the biochemical reaction rate in the eggs,so as to maintain the quality and nutritional value of fresh eggs for a longer period.Coating materials mainly fall into the following categories:polymer materials,oily materials,composite materials,protein-based materials,etc.Single coating usual have some deficiencies,while the moisture-resistance,stability,and oxidation-resistance of composite coating materials are often improved.Finally,this paper presents an outlook on the research trends of poultry egg preservation,aiming to provide references for enriching and perfecting the methods and theoretical system research of poultry egg preservation.
