摘 要:对大豆黄浆水与豆胚芽中含有的生物活性物质质量浓度进行了测定,为其综合利用和生产提供一定的理论依据。采用比色法和电感耦合等离子体质谱法(ICP-MS)测定黄浆水生物活性成分含量。千张黄浆水中的总固形物、总糖、异黄酮、皂苷、Na、K、Ca、Mg的质量浓度分别为2.9%、14.2 g/L、0.194 g/L、0.867 g/L、0.843 mg/L、125.805 mg/L、0.937 mg/L、22.959 mg/L,而在豆干黄浆水中分别为3.0%、17.4 g/L、0.177 g/L、1.247 g/L、0.565 mg/L、106.450 mg/L、0.679 mg/L、15.923 mg/L。豆胚芽中异黄酮和皂苷质量分数分别为3.515、15.468 mg/g(以干质量计)。黄浆水中植酸质量浓度很低,可忽略不计。总糖和K质量浓度较高,有较高的营养价值。千张黄浆水和豆干黄浆水异黄酮及总皂苷质量分数接近,无显著差异。异黄酮质量分数约为0.18 kg/t,总皂苷质量分数约为1.00 kg/t。黄浆水和豆胚芽中的生物活性物质具有较好的开发价值。The content of bioactive substances in yellow pulp water and bean germ was determined,which provided a theoretical basis for its comprehensive utilization and production.The content of bioactive components in yellow pulp water was determined by colorimetry and ICP-MS.The total solids,total sugar,ellagic acid,tannins,sodium,potassium,calcium,and magnesium content of the Qianzhang yellow pulp water were found to be 2.9%,14.2 g/L,0.194 g/L,0.867 g/L,0.843 mg/L,125.805 mg/L,0.937 mg/L and 22.959 mg/L,respectively,while the contents of dried soybean yellow pulp water were 3.0%,17.4 g/L,0.177 g/L,1.247 g/L,0.565 mg/L,106.450 mg/L,0.679 mg/L,15.923 mg/L.The concentrations of flavonoids and tannins in the soybean germ were found to be 3.515,15.468 mg/g(DW).The concentration of pectin in the pulp was found to be very low,and therefore can be considered negligible.The concentration of total sugar and potassium was found to be relatively high,indicating a higher nutritional value.The contents of isoflavones and total saponins in Qianzhang yellow pulp water and dried soybean yellow pulp water were similar,and there was no significant difference.The isoflavone content is about 0.18 kg/t,and the total saponin content is about 1.00 kg/t.The bioactive substances in yellow pulp water and bean germ had good development value.This study could provide a theoretical basis for their comprehensive utilization and production.
