摘  要:采用脂肪酶催化中链脂肪酸甘油三酯(MCT)和长链脂肪酸甘油三酯(LCT)发生酯交换反应,合成中长链脂肪酸甘油三酯(MLCT)。研究酶制剂种类、反应时间、MCT占比、反应温度、加酶量对酯交换反应的影响,并对比间歇式和连续式2种工艺的优缺点。结果表明:固定化脂肪酶TL IM催化效率高,最佳反应条件为反应时间70 min、MCT占比14%(以混合油质量为基准,下同)、反应温度45℃、加酶添加量8%,合成的MLCT含量可达46.09%,MCT含量为2.04%,LCT含量为51.86%。连续工艺具有更高的催化效率,制备的产品指标优于间歇工艺,适合用于大批量生产。2种工艺制备的样品中MLCT含量与市售样品接近,其甘油三酯组成满足相关规定。Medium and long chain fatty acid triglycerides(MLCT) were synthesized by the transesterification reaction between medium chain fatty acid triglycerides(MCT) and long chain fatty acid triglycerides(LCT) catalyzed by lipase. The effects of enzyme preparation type, reaction time, MCT ratio, reaction temperature and enzyme amount on transesterification were studied. The advantages and disadvantages of intermittent and continuous processes were compared. The results showed that immobilized lipaseTL IM had high catalytic efficiency. The optimal reaction conditions were reaction time 70 min, MCT ratio of 14 %(based on the mass of the mixed oil, the same below), reaction temperature 45 ℃, enzyme addition 8 %. The content of MLCT, MCT and LCT was 46.09 %, 2.04 % and 51.86 %, respectively. Continuous process had higher catalytic efficiency, the product index prepared was better than intermittent process, suitable for mass production. The MLCT content of the samples prepared by the two processes was close to that of the commercially available samples, and the triglyceride composition met the requirements of relevant regulation.
