摘  要:对中国花鲈和日本花鲈的野生群体肌肉营养成分进行了研究。结果表明 ,中、日花鲈间肌肉营养成分有一定差异 :中国花鲈灰分、脂肪含量高于日本花鲈 ,蛋白质含量低于日本花鲈 ;总氨基酸含量及必需氨基酸含量低于日本花鲈 ;中国花鲈脂肪酸中不饱和脂肪酸总量低于日本花鲈 ,其中单不饱和脂肪酸含量高于日本花鲈 ,多不饱和脂肪酸含量低于日本花鲈 ;二者都含有丰富的无机元素并且中国花鲈高于日本花鲈。This paper deals with the nutritional components of Lateolabrax sp and L.japonicus .The results showed that there were some differences between the muscles of two species in nutritional components. ash and fat in Lateolabrax sp,were higher than L. japonicus ; protein was lower than L.japonicus ;total amino acids and essential amino acids were lower than L.japonicus . Besides, total unsaturated fatty acids of fat acid were higher than L.japonicus , single unsaturated fatty acid was higher but poly unsaturated fatty acids were lower than L. japonicus . Both of them contained abundant inorganic elements and Lateolabrax sp were higher than L.japonicus.
