长须水龟虫的营养成分分析与评价

摘　　要：分析了长须水龟虫HydrousacuminatusMotsch的虫体粗蛋白、粗脂肪、总糖、粗灰分、矿物质元素等营养成分的含量 ,评价了其蛋白氨基酸的质量。结果表明 :长须水龟虫是一种高蛋白 (含 5 1 60 %干重 )、高脂肪 ( 1 7 96%干重 )、富含矿物质和微量元素 (粗灰分 3 1 0 % ,干重 )的优质蛋白质食品。The nutritional components of Hydrous acuminatus Motsch,including protein,fat,hydrocarbon, ash and mineral element etc.,were analyzed and evaluated.The results indicated that Hydrous acuminatus Motsch is a kind of insectile food with top quality protein (51^60% dry wt), high amount of fat (17^96% dry wt),and abundant mineral element and trace mineral element.
