摘　　要：本文介绍了南瓜的营养价值和药用功效,提出了南瓜综合利用的方案,研究了用南瓜为主要原料加工南瓜脯、南瓜蜜饯、南瓜酱、南瓜糕、南瓜冻、南瓜糖卷、南瓜糖片、南瓜粉等南瓜系列产品的工艺路线和方法。This paper deals with nutrition value and medicinal function of squash,and presents a project of the comprehensive u-tiliza tion of squash.The technological lines and methods of a series of squash food have been studied with squash as material,to pro-cess squash preserves,squash conserves,squash jam,squash cake,squash jelly,squash sugar roll,squash sugar tablet,squash powder and so on.
