摘　　要：胶体磨、高剪切式粉碎机和刀片式粉碎设备都是基于剪切原理的食品物料湿法粉碎设备 ,但其工作原理有所不同。本文从流体力学角度对湿法粉碎的机理。Colloid mills, high shearing disintegrators and cutters are all disintegrators in wet processing that based on shearing, but there are differences in working mechanism. This paper analyses the mechanism of the shattering in wet processing, and discusses the principle of how these equipments work.
