小体积速冻食品中心温度检测的实验研究

摘　　要：本文介绍了小体积速冻食品中心温度的检测方法。通过对青豆、虾仁的实验研究,取得了大量的实验数据,证实了采用冻结食品中心温度检测箱法来测定是可靠的,操作是方便的。最后,还评定了被测参数的不确定度。This article introduces the method on center temperature measurement of small volume quick frozen foods. Through testing investigation for green peas and peeled shrimp, we have obtained a large number of testing data and have verified trustiness and operating convenience for applying method on center temperature measured box of frozen foods. The uncertainty level are determined for the measured parameters.
