Influence of Temperature on Gaseous Concentrations and Respiration Rate of Bananas in Modified Atmosphere Packaging (MAP)

摘  要:在设定的10℃、15℃、20℃、25℃、30℃5个温度条件下,用已测得透气系数的低密度聚乙烯薄膜进行香蕉的薄膜包装贮藏试验。结果表明:(1)温度越低,系统达到平衡状态所需要的时间越长,反之时间越短;(2)O_2和CO_ 2浓度与温度之间的关系可以用曲线方程来描述;(3)香蕉的O_2吸收速率和CO_2释放速率数值的自然对数和热力学温度数值的倒数之间的关系可以通过阿伦纽斯方程(Arrhenius’equation)来描述。Bananas sealed in low density polyethylene (LDPE) bags with determined permeability coefficient were incubated at different temperature (10 ℃ ,15 ℃ ,20 ℃ ,25 ℃ ,30 ℃) and gaseous concentrations and respiration rate of banana in a steady state were studied . The results showed that: (1) The time for the system to reach a steady state was related to the temperature, that is the lower the temperature, and the longer the time; (2) Both O2 and CO2 steady concentrations were decreased in response to decreasing temperature and could be described using the curve equation;( 3) The temperature effects on both O2 uptake rate and CO2 production rate could be described using Arrhenius' e-quation.
