摘　　要：本文分析了南方甘蔗糖厂绵白糖贮存时产生酸败的原因This paper analyses the causes of the soft white sugar acidification and deterioration during storage in cane sugar factories of South China. Meanwhile, the measures to prevent the sugar to go bad are presented in this paper.
