摘 要:初步研究了不同pH条件下鳜鱼(Sinipercachuatsi)消化道不同部位蛋白酶活性的差异.结果表明鳜鱼消化道不同部位蛋白酶的活性存在较大差异,最适pH也不相同.消化道不同部位蛋白酶的活性强弱顺序为:幽门盲囊>胃>肠前段>肠后段.幽门盲囊的蛋白酶活性最强,明显高于胃、肠前段和肠后段.蛋白酶活性在幽门盲囊的最适pH为8 0~10 4,且在偏碱性条件下有较强的活性;在胃部的最适pH约为2 8,且在偏酸性的条件下活性较高;在肠前段和肠后段的最适pH为9 8.Protease activities in different parts of digestive tube of mandarin fish (Siniperca chuatsi Basilewsky) were studied at different pH The results showed that the protease activities and optimum pH values in different parts of digestive tube were quite variant. The order of protease activities from high to low in different parts was pyloric caeca>stomach>intestine The protease activity in pyloric caeca was highest, which was much higher than other parts of digestive tube It is showed that the optimum pH value for protease in pyloric caeca was 80~104, and its activity was higher when it was leaned to basic condition, and that in stomach was 28, higher when it was leaned to acid condition But the protease activities in intestine were 98
