摘 要:分别用石油醚、三氯甲烷、乙酸乙酯和无水乙醇依次提取降香成分,并对它们的抗氧化性能进行了一系列测定,发现乙酸乙酯提取物具有明显的抗氧化性能,加入0 02%和0 04%,可使猪油的氧化稳定性分别提高3 80和5 47倍。对含铁离子的猪油也表现出很强的抗氧化性能,加入0 02%和0 04%的乙酸乙酯提取物,可使猪油的氧化稳定性分别提高4 06和8 12倍(含4mg/kg铁离子),3 86和9 76倍(含10mg/kg铁离子)。The antioxidant were extracted from Dalbergia odorifera T.Chen with organic fluxes of different polarization and their antioxidant activity were determined. The results indicate that the extract with ethyl acetate has very good antioxidant activity,when added 0.02% and 0.04%,the antioxidant activity of lard increased 3.80 and 5.47 times respectively;The extract with ethyl acetate also has very good antioxidant activity to the lard that has Fe^(3+),when added 0.02% and 0.04%,the antioxidant activity of lard increased 4.06 and 8.12 (containing 4 mg/kg Fe^(3+))times,3.86 and 9.76(containing 10 mg/kg Fe^(3+))times respectively.
