摘  要:目的了解眉山市辖区内学校周边几种常见面制食品中铝的含量,探寻铝污染食品的影响因素,为监管部门制定防制措施提供科学依据。方法在眉山市辖区内学校周边的超市(食品店)、学校食堂、街头零售摊和饮食摊随机抽取各类面制品65份样品,按食品中铝电感耦合等离子体发射光谱法进行检验,卫生学评价标准为GB2760-2011《食品添加剂使用标准》。结果监测3大类65份样品铝含量总体超标率为33.85%,油条、糕点、膨化食品铝超标分别为88.89%、28.57%、10%;学校、饮食摊和街头零售摊的油条、糕点类面制品中铝超标率分别为50%、93.75%、50%,现做现卖的油条、糕点类面制品比定型包装的膨化食品的铝超标率高。结论眉山市辖区内学校周边几种常见面制食品中铝超标较多,建议进一步加强食品安全监管力度。Objective To investigate the content of aluminum in flour products around schools in Meishan city and to explore the associated factor and provides the scientific basis for formulating prevention measures.Methods At total of 65 samples of flour made products were collected in the supermarket,canteen and pitches around the school and were detected with plasma emission spectroscopy method,the results were evaluated according to ' GB2760- 2011'. Results The overall over- standard rate in the 65 samples,3 categories flour products was 33. 85%. For deep- fried dough sticks,cake,puffed food and the puffed food the over standard rates were respectively 88. 89%,28. 57% and 10. 00%. The over- standards rate of flour products in school,food stand and street pitches were respectively 50. 00%,93. 75% and 50. 00%.The over standard rate of sale- for- cash fried bread stick,pastry were both higher than that of packaged puffed food. Conclusion The aluminum content in the flour products around school are over standard to a great extent and therefore safety surveillance work needs to be strengthened.
