摘 要:对水相酶解法提取菜籽油与菜籽蛋白所得菜籽蛋白液进行超滤处理 ,研究超滤条件对超滤膜透过速率的影响 ,得出操作压力、温度、料液的 pH、料液蛋白质浓度影响较大。试验结果表明 ,控制操作压力 0 .2 0~ 0 .30MPa ,温度 5 0℃ ,料液 pH9~ 10时效果较好。采用超滤工艺 ,所得菜籽蛋白不含毒素、纯度及回收率在 90 %以上 。This research intends to discover the effect of ultrafiltration on the ratio of permeating flux for UF membrane by applying the technology of ultrafiltration to the protein yielded after aqueous enzymic extraction for rapeseed oil and protein. It verifies that the pressure and temperature of operation, and the pH and thickness of material liquid have obvious effects on the ratio of permeating flux for UF membrane.The optimum conditions are supposed to be as follows: the operating pressure, 0.20-0.30Mpa; temperature, 50℃; and pH 9-10. It shows that the protein yielded by adopting the technology of ultrafiltration contains no toxin, that the purity and recycling rate of protein exceeds 90%, and that the functional properties of protein are much better in comparison with protein by acid subside.
