摘 要:对百里香的丙酮提取物的乙酸乙酯和正丁醇萃取物成分的体外抗氧化活性进行了研究,两者的总抗氧化力、羟自由基、Fe3+还原力和由AAPH和CuSO4诱导的大豆卵磷脂的过氧化抑制进行了比较。结果表明,乙酸乙酯和正丁醇萃取物成分均有较强的抗氧化能力,主要为低分子量的黄酮类化合物,且抗氧化能力呈浓度效应;乙酸乙酯萃取物的抗氧化能力明显强于正丁醇萃取物。百里香可作为一种新型的天然抗氧化剂资源。The present study was designated to evaluate the chemical antioxidant activities of the fractions obtained by using n-BuOH and ethyl acetate, the subfractions from Thymus vulgaris L.Total antioxidant activity, hydroxyl radical scavenging, Fe3+ reducing power,inhibition of lipid peroxidation induced by AAPH and CuSO4 with the liposome assay systems in vitro were investigated. Ethyl acetate fractions had greater total antioxidant activity ,reducing ability and its antioxidant activity against hydroxyl radicals, ability of scavenge peroxyl radical than n-BuOH fraction as measured by the formation of conjugated diene. The potential oxidative mechanism attributed to their hydrogen denotation the metal ion reducing activity associated with antioxidant activity. Increasing concentration of all the extracts had significantly increased antioxidant power, the major bioactive compounds of phenolics were found to be low-molecular-weight flavonoid groups. Thus made it possible to consider some of Thymus vulgaris L as a potential source of antioxidants of natural origin.
