摘 要:牛肝菌是一种营养价值和药用价值极高的肉质大型真菌,富含蛋白质、黄酮、甾醇、多糖、氨基酸、矿物质、萜类等营养和活性物质,具有抗氧化、抗菌、抗肿瘤、调节免疫力、降血糖等功效。本文综述了牛肝菌的营养价值、呈味物质、活性成分及生理功能,分析了行业未来研究重点,为牛肝菌的精深加工、新产品开发以及医药研发提供有益参考。Boletus edulis is a large fleshy fungus with extremely high nutritional and medicinal value. It is rich in nutrients and active substances, such as protein, flavonoids, sterols, polysaccharides, amino acids, minerals, terpenes, etc. And it has antioxidant, antibacterial, anti-tumor, immune regulating, and hypoglycemic effects. This article reviews the nutritional value, flavor substances, active ingredients, and physiological functions of Boletus edulis, analyzes the future research focus of the industry, and provides useful references for the deep processing, new product development, and pharmaceutical research and development of Boletus edulis.
