摘　　要：用酶法在受控条件下降解玉米醇溶蛋白 ,对酶解产物进行分离纯化 ,获得一种新的抗氧化肽 ;对其一级结构进行了表征 ,氨基酸组成和顺序为 Leu-Asp-Tyr-Glu;A kind of new corn anti oxidative peptide was prepared via protease hydrolysis of zein catalyzed by alcalase, an alkaline protease under a certain condition, followed by isolation and purification. The hydrolysis time was fixed on the basis of the dependence of antioxidative activity on hydrolysis degree. It was found that the hydrolysis for 4 h gave the highest antioxidative activity.
