摘　　要：蚕粉中的主要化学成分为水分、蛋白质、总糖、脂肪和灰分,其含量(w／w,%)分别为6.13、60.45、10.63、11.27和9.82.蚕粉挥发油的回收率约为1%(干基,w／w).利用GC／MS对蚕粉的挥发油进行了分离鉴定,共检出105个组分,确定了69个化学组分的结构.挥发油中含有大量不饱和的醇和酸,多种脂肪酸,烷烃和芳香族,甾醇类,二萜烯类,杂环类化合物.其中含量最高的是二噻嗪类(MW163);其次是十六碳烯醇类(MW296)和十八醇类(MW268)等.　This paper discusses the contents of water, protein, carbohydrate, liquid and ash in silkworm powders. They are 6.13、60.45、10.63、11.27 and9.82 (%, w/w), respectively. The content of volatile oil isolated by water is nearly 1% (db, w/w). There are 105 chemical compositions in the volatile oil analyzed with GC/MS. Most of them are unsaturation alcohols, fatty acids, paraffinic hydrocarbons, aromatic series, sterols, diterpene olefins, heterocycle compositions. The structures of 69 chemical compositions in volatile oil are affirmed. The highest at content is 5,6-dihydro-2,4,6-trimethyl-4H-1,3,5-dithiazine (MW163), and next to them are 3,7,11,15-tetramethyl-2-hexadecen-1-ol (MW296) and octadecanal (MW268).
