摘　　要：介绍了醋蛋液生产的渊源、生产工艺和操作要点。通过对其营养成分和发展前景的分析,认为醋蛋液作为一种高营养性的复合保健食品将有广阔的发展空间。The origin, processing and operation point of making vinegar egg-juice was introduced in this paper. According to analysis of its nutrition constituent and prospect, vinegar egg-juice was regarded as a kind of nutritional and compound healthy food and it would be developed extensively.
