摘　　要：蛋白质芯片技术是一种新型蛋白质分析技术;该文对近年来蛋白质芯片技术进行总结并对其在食品研究方面应用进行展望。Based on the biosensor concept with imaging ellipsometry, the protein chip was developed as a new technique for protein analysis. At present, it has been one of research focuses. In this paper, the recent advance in protein chip is reviewd and its application in food research is prospected.
