摘　　要：酱油是我国传统的调味品之一,在经济迅猛发展的今天,它依然存在着较强的生命力。但是面对世界范围内酱油行业的变革与挑战,如何发挥传统调味品的优势,结合现代生物技术与工业技术,打造国际性品牌是发展的必然趋势。Soy sauce is one of the Chinese traditional condiments and still keeping its vitality in the rapid economic development, nowadays. However, faced with the innovation and new challenge in the world, combining modern biological and industrial technology with traditional condiment is a necessary trend in order to create international brand.
