巨大口蘑子实体营养成分分析

摘　　要：测定了巨大口蘑子实体中氨基酸、矿质元素、多糖、粗蛋白、粗脂肪、灰分和粗纤维含量。结果表明,在测定的18种氨基酸中,8种必须氨基酸含量占氨基酸总量的40.63%;矿质元素K、Na、Ca、Mg、Cu、Fe、Zn、Mn和Si含量分别是17654.35、1644.28、177.96、909.26、184.12、171.54、102.01、3.91和1.28mg/kg;多糖、粗蛋白质、粗脂肪、灰分和粗纤维含量分别是11.59%、36.59%、4.26%、6.31%和9.43%。<Abstrcat> The content of nutrition components in Tricholoma giganteum fruitbodies was determined. The experiment results showed that the content of 8 kinds of essential amino acids in 18 kinds of amino acids was 40.63%, and that the contents of mineral elements such as K, Na, Ca, Mg, Cu, Fe, Zn, Mn and Si in T. giganteum fruitbodies were 17654.35, 1644.28, 177.96, 909.26, 184.12, 171.54, 102.01, 3.91 and 1.28mg/kg respectively;while the contents of polysaccharide, crude protein, crude fat, ash and crude fiber in T. giganteum fruitbodies were 11.59%, 36.59%, 4.26%, 6.31% and 9.43% respectively.
