摘 要:对超声辅助法提取茶多酚和儿茶素的条件进行了研究。正交试验结果表明,当以80%的乙醇为溶剂、料液比为1:16(W/V)、超声频率为25kHz、超声功率为160W、超声处理时间为25min、浸提温度为70℃时,茶多酚和儿茶素的浸提率可分别达24.25%和11.46%,较之常规浸提法分别提高了49.2%和40.5%;茶多酚和儿茶素的含量分别为69.38%和32.78%,与常规浸提法基本相同。Affecting factors of extracting tea polyphenols and catechin assisted by ultrasonic wave were investigated. The results of orthogonal test indicated that the optimal conditions were the concentration of ethanol solution 80% , mate-rial-ethanol solution ratio 1:16 ( W/ V) , the frequency of ultrasonic wave 25 kHz, the power of ultrasonic wave 160 W, ultrasonic time 25 minutes and temperature 70℃ .Under the optimal conditions,the yields of tea polyphenols and catechin were 24.31% and 11.73% respectively,which increased by 49.2% and 40.5% compared with conventional extract approach . The contents of tea polyphenols and catechin were 69.38 % and 32.78 % respectively, which were almost equal to that of conventional extract approach.
