摘　　要：荸荠富含人体需要的多种营养成分,荸荠的苗秧、根、果实等均可入药,具有较高的医疗价值。阐述了荸荠的营养保健作用和加工技术,为荸荠的开发利用开辟了一条途径。Chufa has abundant nutritions which are essential to the health of human being. The seedling young, root, fruit of chufa, have good medical and healthy function. The paper summarized the nutrition healthy and machining technology of chufa. The study provides a reliable basis for the processing of chufa.
