摘  要:本文采用高强脉冲电场对过氧化物酶进行处理。研究了电场强度,脉冲数目和频率等因素对酶活性的影响,并与热处理过氧化物酶进行对比。结果表明:高强脉冲电场可引起过氧化物酶的活性变化。且失活率与电场强度和脉冲数目成正比。频率对活性的影响不明显。The effects of pulsed electric fields (PEF) on the activity of peroxidase were studied on this paper. Some affective factors such as electric field strength, number of pulses and frequency were changed. It also campared with thermal treatment. Results showed that: the treatment of PEF (up to 50kV/cm) can causF the inactivity of peroxidase,and the inactivity rate increases with the increasing of the electric field strength and number of pulses. There are inapparent changes caused by the frequency.
