碱溶酸沉法提取黑米天然色素的研究

摘　　要：提出了碱溶酸辣沉法提取黑米天然色大的新方法，精选取去杂的黑米经脱脂后，以水、醇混合液作溶剂，以硼砂──氢氧化钠体系作碱性缓冲液（ｐＨ９．０～９．５）进行提取，用邻苯二甲酸氢钾──盐酸组成的酸性缓冲液（ｐＨ３～４）酸化提取液，经浓缩沉淀而得到黑米色素。该方法简单、提取率高，且原料可综合利用。The netural pigment from black rice belong among in flavonoids(or antho-cyanins),there are two phenolic hydooxyl groups at C_7 cmd C_'4 position of chemical struc-tural formula,The black rice is defatted by petroleum ether, is extracted by water-ethanol solvent through Na_2B_4O_7. 10H_2O:NaOH medium,the basic extractive (fiItrate so-lutin)is acidified by KOOC一C_6H_4一COOH:HCI Solution,and changes into acidic solution,the acidic solution in red is concentrated under reduce pressure,the precipicate sepa-rated Out from the concentrated solution under low temperature is exactly the black ricepigment.The technology is uncomplicated and its output rate is high。
