摘  要:将TH-AADY应用于浓香型大曲酒秋季转排生产,能提高耐酸、耐温性能及补充酵母数量的作用,降低出池酒醅残糖量,促进发酵,保证酒质,提高转排效果,实现增产增效作用。从1999年以来6年间,公司使用TH-AADY后,转排后第一排出酒率年平均提高4.4%,双轮率年平均提高3.6%;转排后第二排出酒率年平均提高2.3%,双轮率年平均提高0.7%,年平均增加经济效益166万元,累计创造经济效益近千万元。The application of TH-AADY in autumn Vans-production of Luzhou-flavor Daqu liquor could improve acid-resistance and high temperature-resistance capability of Daqu, supplement yeast quantity, reduce residual sugar quantity of fermented grains, accelerate fermentation, ensure liquor quality, improve trans-production effects, and realize profitable benefits. Since 1999, TH-AADY had been applied in the distillery and the results were as follows : the average liquor output and liquor yield by double bottom fermentation increased 4.4 % and 3.6 % respectively annually in the first round production after trans-production; and the average liquor output and liquor yield by double bottom fermentation increased 2.3 % and 0.7 % respectively annually in the second round production. The distillery had gained average 1.66 million RMB economic benefits annually and almost 10 million RMB economic benefits had been achieved in the past six years. (Tran. by YUE Yang)
