摘　　要：对测定酵母菌株中麦角固醇的“皂化—萃取—紫外检测”法进行了探讨,通过反复实验确定了最佳的皂化及测定条件:300g/L的KOH溶液,40%(V/V)的乙醇水溶液,麦角固醇在282nm处有最大紫外吸收值。The method of determining ergosterol in the yeasts - ＂saponification - extraction - UV detection＂ was studied in this paper, and the optimal saponification conditions obtained from iterative tests were as follows： 30g/ 100mLKOH, 40% （V/V） ethanol and 282nm optimal absorbing wavelengh.
