绿茶表色及感观审评用色卡方法的研究

摘　　要：将六安瓜片茶标准图色彩,利用Photoshop软件,结合感官审评重新读取像素点平均色泽信息L=54、a=-11、b=22具有重演性。并对8种绿茶的干茶、汤色和叶底色泽进行参数测定与感官审评给分,求其X-、b/a、Cab、Sab值与感官评分呈显著性相关:干茶a、Sab相关系数为-0.9598和0.8510;茶汤Sab相关系数为0.9378;叶底Cab相关系数为0.9226;证明绿茶色泽是品质的综合反映。根据8种绿茶的色泽参数L、a、b的最小值(31、-40、20)和最大值(95、0、68),确定色卡Lab起始值(30、-60、20)和终止值(90、0、80),颜色总数216 000种。按间隔5、10、20取值,其颜色总数分别为2 197、343、64种。即色卡分为专业版、标准版和简化版,其中任一版面色泽用于茶叶审评课教学色卡都是可行的。The picture of green tea LIUANKUAPAN was taken with digital camera and treated with Photoshop software. Through the analysis of multiple image points, three mean value of color parameters were as follows ： L is 54, a is - 11, b is 22. The color determined by three color parameters above has good consensus with sensory test. Color parameters of eight kinds of green tea （drying tea color, liquor color and infused color） were got by the same way described above and sensory test was processed at the same time. Through calculation with different forms, X^-, b/a, Cab and Sab were got respectively. The results showed that these parameters were significantly correlated to the organic quality of tea. The a value and Sab value of dry tea color were correlated to the organic quality of tea for -0. 9598 and 0. 8510 respectively. The Sab value of liquor color were correlated to the organic quality of tea for 0. 9378. The Cab value of infused color were correlated to the organic quality of tea for 0. 9226. These results proved that the color of,green tea stand for the quality well. According to the minimum value （31, -40, 20） and the maximum value （95, 0, 68） of eight green tea＇s luster parameter L, a, b, color card Lab initial value （30, =60,20） and termination value （90, 0, 80） were defined, there are 216 000 kinds of color totally. The extent defined above were separated by 5,10,20 interval respectively, three kinds of color card were got. They are the professional version（2 197 kinds color）, the standard version kinds color） respectively. No matter what version is feasible （343 kinds color） and the simplification version （64 for the sensory test teaching color card.
