摘  要:用氨基酸自动分析仪和气相色谱仪测定海参体壁及海参消化道中氨基酸、脂肪酸的组成和含量。结果表明:海参体壁及消化道中都含有18种氨基酸,分别占体壁干重的37.23%、消化道湿重的7.96%,其中都含有8种必需氨基酸,分别占总氨基酸的31.02%和41.81%;体壁及消化道中脂肪酸分别是19种和21种,其总量为12.931 mg/g(干重)、5.782 mg/g(湿重)。消化道中同时含有DHA和EPA,且EPA的含量最高,达17.36%。The compositions of amino acids and fatty acids in body walls and alimentary canals of sea cucumber Apostichopus japonicus were determined by automatism analysis machine and gas chromatography to exploit and utilize the sea cucumber and to evaluate nutrition and medicine value. Eighteen amino acids were found in the body walls (37.23% of total body wall amount) and alimentary canals (7.96% of total alimentary canal amount). In 18 amino acids, 8 essential amino accounted for 31.02% of the total amino acids in body walls, and 41.81% in alimentary canals. Nineteen fatty acids (12.931 mg/g dry matter) were found in the body walls, and 21(5.782 mg/g wet matter) in the alimentary canals. For fatty acids, eicosapentaenic acid (EPA) was the predominate fatty acids, accounting for 17.36%. There were more fatty acid and amino acids in body walls than those in the alimentary canal.
