摘　　要：本文对近二十年来国内外有关绿茶中脂溶性色素及其衍生物与绿茶品质的关系,绿茶中脂溶性色素的提取与检测方法及其在绿茶加工过程中的动态变化进行了综述。The studies on the lipid-soluble pigments in green tea were summarized in this paper, which involved the relationship between the lipid-soluble pigments and its ramifications and the quality of green tea, the extraction and detection methods of the lipid-soluble pigments and the dynamic change during green tea processing.
