摘 要:以广东肇庆地区特产鱼种———文庆鲤为原料,通过筛选,选择枯草杆菌中性蛋白酶为实验用酶来制备文庆鲤酶解蛋白(EAP),并最终确定了最佳工艺条件:温度40℃,酶量2%,底物浓度1∶2,时间5.5 h。In this paper,how to prepare enzymolyzic animal protein(EAP) by choosing Subtilisin through sifting several enzymes with Wenqing Carp as raw material was discussed. The optimal technological conditions were determined finally. That was,at the temperature of 40℃ ,the specific value of the quantity of substrate and water was 1:2,the quantity of subtilisin was 2% and enzymatic hydrolysis time was 5.5 h.
