摘　　要：木聚糖是半纤维素的一种重要组成成分,广泛存在于各种植物资源中。木聚糖酶是木聚糖的水解酶,它在食品、饲料、造纸等工业上有着非常广泛的应用。本研究就木聚糖酶在食品中的应用范围、作用特点及其机理进行了简要的阐述。Xylan is one of the component of hemicellulose, exises in various plant resources, xylanase belongs to a hydrolytic enzyme of the xylan, application of the xylanase in the industry of the food , feed and paper making are very wide. This paper is about the range, trait and principium of the application of the xylanase in food.
