摘　　要：对食品加工过程中及产品在货架期间的稳定性变化规律的动力学式进行数学方法的处理，以图解法建立过程的速率方程。The mathematical model of the stable changing of food products during process and storage in shelf life was given in the paper. The rate equations were described by graphical method and the parameters were calculated by the normal nonlinear model.
