通江银耳复合保健袋泡茶的研制

摘　　要：以通江椴木银耳为主要原料,并与金银花、西洋参、玉竹和绿茶进行合理的配方,研制出具有浓郁银耳风味的通江银耳复合袋泡茶。L9(34)正交实验并结合感官评定确定:原辅料配比为银耳40.0%、绿茶25.0%、金银花13.0%、西洋参5.0%和玉竹3.0%;以12.0%的甜蜜素与蔗糖等量混合物为甜味剂;银耳香精1.0‰;焦糖色素0.8%。This paper mainly studied to produce health bag-tea of Tong-Jiang tremellafuclformis berk, The recipe is optimal by doing 1_9 （34） orthogonal texts, which is Tremellafuclformis Berk 40,0%, green tea 25.0%, Lonicera japonica Thunb 13.0%, Panax quinquefolium L 5.0%, Polygonatum odoratan（Mill.） Druce 3,0%, the mixture of same ratio of suger and Sodium Cyclamate 12.0%, perfume 0.1%, and caramel 3.0% at the base of original tea＇s dry weight.
