摘  要:本文研究了用乙醇为溶剂提取苹果渣中多酚物质的最佳工艺,考察醇提取时乙醇浓度、料液比、提取时间、提取温度对提取率的影响,正交试验结果表明最佳浸提条件为:乙醇浓度60%,提取温度60℃提取时间4h,料液比1:12;此条件下提取量为1072.615mg/kg。Abstract:The optimum polyphenosls extraction process of apple pomace with ethanol and water wa:~ studied ifl this paper , Some affecting factors, suchas the comcentration of ethanol, the ratio of apple pomace to extractant .extracting time .extracting temperature were studied the optimum technological-- conditions attained by theorthogonal experiment were as follows;concentration of ethanol 60%, extraction temperature60 ℃ ,extraction time 4h and the ratio of apple pomace to extractant 1:12;the quantity of extraction on this condition was 1072. 615mg/kg.
