摘　　要：本文分析了余甘果汁在贮存过程中出现沉淀和褐变的原因，并在试验研究的基础上，结合余甘果汁生产工艺和特点，提出了防止沉淀和控制褐变反应的具体措施。篢his paper analyses the reason of appearing sediment and.browning of Embliciuice in the procedure of storage，and on the basis of practical research，combines the pro-cedure in production and characteristics of Emblic juice，puts forward the specific mea－sure which can prevent sediment and control browning reaction.
