摘 要:通过单因素试验研究了果胶酶和纤维素酶澄清荔枝提取液的最佳条件,并研究了两酶联合使用时的澄清效果,用正交试验确定了最佳澄清条件。结果表明,以透光率为指标,果胶酶澄清荔枝提取液的最佳条件为:酶剂量3mL/L,时间5h,温度55℃,pH4.5;纤维素酶澄清荔枝提取液的最佳条件为:酶剂量10mL/L,时间60min,温度60℃,pH5.0。果胶酶和纤维素酶联合使用比单独使用可明显提高澄清效率,最佳条件为果胶酶3mL/L、纤维素酶8mL/L、时间2h、温度57.5℃、pH4.75。The optimum conditions for clarification of extraction liquid from litchi by pectinase and cellulase were not only studied by single factor experiment, but also by orthogonal experiment design guided by transmissivity when two kinds of enzymes were used to clarify at the same time. The results showed that the optimum conditions for pectinase clarifying were as follows: 3 mL/L added, 5 h, 55℃, pH4.5; and for cellulase were as follows: 10 mL/L added, 60 min, 60℃ , pH5.0 clarifying efficency was obviously raised when pectinase and cellulase were both used at the same time, which the optimum conditions were as follows: 3 mL/L added pectinase, 8 mL/L added cellulase, 2 h, 57.5℃, pH4.75.
