摘  要:目的探索通过电导率的测定来鉴别潲水油的检测方法。方法将潲水油与合格食用油进行对照研究,寻找潲水油在电导率测定中的特性。结果潲水油经提取后水相平均电导率为119μs/cm,是粗菜子油的3倍、精练菜子油和大豆色拉油的11倍、猪油的28倍。潲水油与精练菜子油混合后,潲水油的质量分数与电导率呈线形关系,回归方程为Y=9.56+117.21X,r=0.9992。潲水油与合格食用油电导率测定结果差异有统计学意义(P<0.01)。结论电导率的测定可用于潲水油的鉴别检测。Objective To explore the identification method of hogwash oil through measuring electrical conductivity. Method Hogwash oil and qualified edible oil were compared to find the characteristics of electrical conductivity. Results The mean aqueous phase electrical conductivity was ll9μs/cm and was 3 times to the crude rapeseeds oil, 11 times to refined rapeseeds oil and soybean salad oil, 28 times to lard. Hogwash oil's quality score and electrical conductivity showed a linear relationship after mixed hogwash oil and refined edible rapeseeds oil, the regressive equation was Y = 9.56 + 117.2X, r = 0. 9992. The measurement results of electrical conductivity in hogwash oil and qualified edible oil showed significant difference (P〈 0.01). Conclusion Electrical conductivity is a practicable simple method to identify hogwash oil.
