摘  要:主要介绍了目前国内外电子舌的研究现状,重点阐述了电子舌技术在茶叶品质评价、饮料鉴别、酒类识别、乳品工业、发酵过程监控、植物油检测、食品安全等食品领域的应用研究进展,并对电子舌在食品工业中进一步应用的前景作了展望。The current research situation of electronic tongue at home and abroad was introduced, several kinds of taste sensor based on different methods and their features were studied.The developing situation and application of electronic tongue in tea quality evaluation, classification of beverages, assessment of wine, dairy industry, fermentation monitoring, discrimination of vegetable oils and food safety were expounded. And the electronic tongue's further application and developing prospective in food industry was discussed.
