摘  要:分析结果显示,碳水化合物和蛋白质是长松藻的主要成分,两者共占藻体干重的92.0%,其中不溶性膳食纤维占藻体干重的41.5%,蛋白质占19.7%,必需氨基酸丰富,占氨基酸总量的43.5%,氨基酸评分88,限制氨基酸为蛋氨酸和胱氨酸;脂肪含量为4.79%,不饱脂肪酸含量高,占脂肪酸的47.9%;矿质元素含量丰富,尤其是铁和锌含量高。因此,长松藻是一种高膳食纤维、高蛋白、低脂肪、低热量,且富含铁、锌等微量矿质元素的天然理想保健食品原料。Analysis results of chemical constituents in Codium cylindricum Holms showed that carbohydrates and crude protein were its main constituents, which was 92.0% of the algae dry weight. Among them, the insoluble dietary fiber reached 41.5%,and protein was about 19.7%, and EAA content, which was 43.5 % of the total AA, amino acid score was 88, and limited amino acids were Met and Cys;Crude fat was 4.79% with high polyunsaturated fatty acid, and unsaturated fatty acid amounted was 47.9% of the total FA. The content of minerals were very rich, especially Fe and Zn. Codium cylindricum Holm is a kind of healthy food material which can provide high dietary fiber, high protein, low fat and calorie and rich minerals.
