摘 要:从湖北民间传统酒曲中分离得到1株霉菌F14,其糖化酶活力强,所酿的酒具有独特风味。对F14进行了菌落形态、菌体特征形态的观察及Pfeffer氏液培养等鉴定试验,F14具有假根、匍匐菌丝、孢囊孢子、菌丝无隔膜等根霉的典型形态特征;且在Pfeffer氏液中于28℃、37℃条件下培养生长,在45℃条件下不生长。鉴定确定该菌株为米根霉种(Rhizopus oryzae)。The predominant mould strain F14 in traditional Hubei starter was separated successfully. Such strain had strong saccharifying enzyme activity and liquor produced by such strain had special flavor. Colonial morphology and individual configuration traits were observed and Pfeffer's solution culture was done for F14 strain. F14 strain grew rhizoid, stolon, sporangiospores and hypase was nonseptate, which were the typical morphological characteristics of rhizopus species. Besides, it could grow in Pfeffer's solution at 28 ℃ and at 37℃ but not at 45 ℃. Finally, F14 strain was identified as Rhizopus oryzae.
