摘  要:番茄红素是一种非常重要的类胡萝卜素,具有防癌抗癌、保护心血管、影响人类生殖、提高免疫能力、预防高血糖、延缓衰老以及保护人体皮肤免受伤害等多种保健功能,是目前国际上功能性食品成分研究中的一个热点。根据国内外有关文献资料,现综述番茄红素研究历史和现状、理化性质、生物学特性、保健作用及药剂学研究等方面的进展,并对其应用前景进行展望。Lycopene, a major carotenoid, is considered the new favorite of health product in the 21st century. It has a lot of health function such as precaution and treatment of cancer, protection of cardiovascular function, impact on human procreate system, raising immunity, prevention from hyperglycemia, postponement aging and safeguard skin, so was a hot topic of the research on ingredients of the functional food nowadays. Based on domestic and overseas concerned literatures, this article reviews the research development of lycopene including history and status quo, physico-chemical properties, the biological characteristic, the health function and pharmaceutics studies, as well as the potential application.
