摘 要:目的了解我国6城市学生午餐供餐单位的卫生状况。方法按照典型调查的原则抽取我国6城市9家供餐企业和18家学生食堂,采用问卷调查法和现场观察法进行调查。结果供餐企业的卫生问题主要集中在分餐间设施不全、盒饭标识内容不全、运送及留样不符合规定,食堂的卫生问题主要为功能间设计布局不合理、采购食品未按要求索证、服务人员卫生意识差、留样不合规定及卫生管理组织制度不健全。结论应针对企业和食堂存在的问题采取相应改进措施,加强监督和指导,强化管理,企业推行HACCP。Objective To evaluate the current status of hygiene of the lunch suppliers. Method The questionnaire and survey were used to collect information on school lunch among 9 enterprises and 18 canteens in 6 cities by the typical survey method. Results The main hygienic problems of the lunch supplying enterprises were that facility in packing room was not perfect, and the label in the box lunch were not perfect as required, and the transport and samples were not in line with regulation. The hygienic problem of the canteen concentrated in arrangement of function room, purchase food without checking the certificate, and the hygienic awareness of the staff were lack, and samples were not in line with regulation, and the systems of the management were not sound. Conclusion Different steps should be taken according to different conditions in the enterprises and canteens. It is necessary to strengthen the supervision and direction, reinforce the self-management and carry out HACCP to inquiry.
