油脂加工过程中重金属危害的研究

摘　　要：通过对油脂加工工序中毛油、脱胶油、碱炼油、脱色油、脱臭油中铜、铁、铅、砷4种重金属含量的分析可知,油脂中的重金属总含量在加工工艺过程中呈不断减少的趋势。一些加工辅料的使用及设备的锈损有可能会将少量重金属带入油中,但总量较少,不会对食用油的安全带来危害。The content of Cu, Fe, Pb and As was analyzed in crude oil, alkali refined oil, degummed oil, bleached oil and deodorized oil. The result showed that the content of the heavy metal was reduced in the course of oil processing. Adding some accessories and rust of equipments could bring some heavy metal into oil, but the content was little, and no harm to edile oil.
