摘　　要：窖泥老化及微生物代谢有害物质的不断积累,窖泥中有益功能微生物菌种退化,引起窖泥退化、板结,致使产酒质量下降。窖泥的养护措施:①酒醅出窖后,将窖内残醅打扫干净,洒上低度酒和撒曲粉;②运用养窖营养液强化窖泥养窖;③加强生产管理。(孙悟)The constant accumulation of harmful metabolites, pit mud aging, and the degradation of beneficial microbes in pit mud would induce pit mud degradation and caking and further result in inferior liquor quality. The pits maintenance measures included： 1.cleaning the residual fer-mented grains in pits after the drainage of fermented grains and sprinkling low-alcohol liquor and starter powder in pits; 2. the use of nutritional solution for pits maintenance; 3. strengthening production management. （Tran. by YUE Yang）
