摘 要:研究木瓜蛋白酶对壳聚糖的降解作用。用分光光度法测定还原糖浓度和粘度法测定溶液粘度作为判断依据,探讨了各种因素对木瓜蛋白酶催化壳聚糖降解的影响。结果显示,木瓜蛋白酶降解壳聚糖的较佳条件:脱乙酰度85.7%的壳聚糖、底物浓度0.5%、pH 4.0、温度40℃、酶底物比10%;酶解初始阶段粘度下降很快,30min内粘度下降百分比达到70.77%,1h之后粘度变化平缓。The depolymerization of ehitosan by papain was studied. By determining the concentration of reducing sugar and viscosity in ehitosan solution, the effects on the efficiency of catalytic degradation of ehitosan by papain were investigated. The results showed that the optimal conditions for degradation of Chitosan with papain were ehitosan with 85.7% DD (deaeetylation degree),ehitosan eoneentration 0.5%, pH4.0, reaetion temperature 40℃, papain: ehitason = 1: 10 ;papain degraded quite quickly in initial reaction, the viscosity deerease pereentage was 70.77% in 30 min and it tended to be stable after 1 h
